Panera Bread Company. The Group's principal activity is to provide food for breakfast and lunch. The food items include fresh baked goods, made-to-order sandwiches, soups, salads, custom roasted coffees and other cafe beverages. The Group operates in three reportable business segments: The Bakery-Cafe segment is comprised of the operating activities of the bakery-cafes owned by the Group. The Franchise segment licenses qualified operators to conduct business under the Panera Bread(R) name and also of the costs to monitor the operations of these bakery-cafes. The Fresh dough sales to franchisees supplies fresh dough items and indirectly supplies proprietary sweet good items through a contract manufacturing arrangement. As of 26-Dec-2006, the Group's retail operations consist of 391 Company-owned bakery-cafes and 636 franchise-operated bakery-cafes in 38 states.
