Understand terms used in the candy making process

When you are selling candy, being knowledgeable about the terms used during the candy-making process can help you explain the process to your customers in an easy-to-understand way. Generally, customers want to buy products from knowledgeable vendors.

Fully understanding terms associated with candy enables you to show your knowledge to your customers. However, it also enables you to purchase products from the best possible vendors, as you will know what questions to ask when inquiring about the candy.

 

Candy thermometer

A candy thermometer is a high temperature glass and mercury thermometer used to measure candy syrup temperatures.

Temperature stage

When cooking candy, water in the candy evaporates as it is heated. This evaporation leads to a change in consistency of the candy. These changes are called temperature stages.

Temper

Tempering is the process of making the coating on chocolate shiny and hard. This is done by slowly heating the chocolate, which causes a chemical reaction with the cocoa butter.

Conching

Conching chocolate takes place toward the end of the manufacturing process. This is the step in which the chocolate is smoothed by kneading it. The flavor is also enhanced during this step.
