Don't over complicate the process. Approach your sales process in the same way but figure out how to do it digitally. You can still make calls then instead of scheduling a face to face you schedule a Zoom call or Google Hangout and have the exact same conversation. The same goes for signing contracts and taking payments.
Jot down your sales process on paper and I'm sure between CRMs, Payment Processors, Proposal Builders etc you can recreate the process in a digital way.
