How can we increase the number of Twitter followers for a not for profit service?
Our service is a not for profit that shares information about life and living in the UK through Twitter updates. We want more people to benefit from the information.
Chasing for followers is not what you should do - these days it has been found again and again that it isn't about the number of followers that you have but whether the content you are sharing it interesting.
When you create engaging content, engage within the right communities and have a professional looking account, the follows will increase naturally. Your focus is more about helping people benefit from the information - working out how to do this with Twitter should be you main focus and the follows will come naturally.
For you it is going to be more about finding the relevant hashtags and Twitter chats to engage with with interesting and original content. It might be worth investing in getting some help from a social media specialist to help you identify which ones to target and how.
Engagement! It's the key to building a social brand. Your content needs to ask questions and drive discussions. You have a great opportunity as your product has a certain feel good factor to it.
Following key individuals and discussions on social channels and then adding to those discussions can drive numbers up but I agree with other comments, it's not all about numbers.
Finally, make sure you are current and unique - it's not easy but think about what your company does and how it ties into current affairs/hot topics.

Focus on Quality over quantity.
You are non-profit, therefore your best quality is serving and helping humanity. Concentrate on the recipients who receive this benefit from your org, and ask them to spread the word. Your "customers" are your best advocates to help spread the word, because you're goal transcends anything that will touch people's heart.
Focus on touching people's hearts, not on the tools. Social Media are tools and methods to help you but in this case. Your work is the story, make that the centerpiece and have Word of Mouth through your recipients and partners.
Talk about Life and how to live well, well being, what humanitarian service this provides since it's not-profit. What is your purpose of the org? TELL you "WHY"
Why did your org exists? to help people, to promote better living...think along those lines
