What is the best platform to create a few simple landing pages?
I am in the process of validating my idea and want to create a simple website and some landing pages to get feedback. Should I use Wordpress, Wix or something more like Unbounce?
I'd like to commend you first for validating your idea via a web site. You're well ahead of so many people with that knowledge.
Conversation rate optimization is important, and for that, using pre-made templates that convert well could be a wise investment.
Unbounce is the 800-lb gorilla, so I'd go there. If not, check out Instapage and Visual Website Optimizer.
Good luck and make sure to track everything! Do lots of A/B testing. A great tool for that would be Optimizely. Very little actual technical knowledge will be needed.

I've been told Wordpress is good. I am using Go Daddy but will develop my landing pages in wordpress and import to go daddy.
In my design firm we always start with a Creative Briefing and a review of the business plan WELL before talking about creative design, platforms, executions, etc. Why? Because it is so easy to get caught up in tech-specs and miss the whole point.
The other thing is: It sounds like you are attempting to do this yourself? If so, not recommended, as you are going to miss a lot of opportunity by 1.) not being a communications practitioner, and 2.) by being far too close to your business. We often refer to this malady as 'navel gazing' and it can do you a disservice. The latter is one of the great advantages of working with an outside communications design firm. A clear, honest view from trained professionals.
One final note -- Do be careful of CMS type sites. If you ever want to move it to another host, they are not the easiest of creatures to move. It can be done, but transplanting your own liver is easier.

Maintaining the pages are much easier in wordpress than other frameworks.
I use Squarespace. $99 per year, easy to edit, customize and add links to. It points to my custom domain too, no squarespace marketing in the URL.

Typically, I recommend WordPress for everything. It easy to use and there are so many options. It also is used to build about 23% of the sites on the Internet so there is a lot of available help. Occasionally, for special tasks I cast a wider net. In this case Will Mitchell has a nice blog where he describes 3 Steps to Validate Your Business Idea. He used to use Unbounce (FREE) but now uses a paid service LeadPages to create all of his idea validation landing pages. Once you have an account and get familiar with it, it is very easy to use. Will doesn't put much time into these landing pages. The goal is to get it up QUICK and make sure it is something that your target market would bite at. - The Pragmatic Web Designer.
Us! We can do it in a cost effective manner, but with creativity that the other platforms or the less experienced guys can do. :-)

With Wix, if you are not paying I believe they watermark your page with their name/logo and a domain name aswell. If you do pay, pay a professional.
