I want to build an e-commerce store for my client and I need your opinions, Which platform should I go with, my client has approx 1000 to 10,000 products.

I'm in the process of getting a new site built. I curently use Wordpress with some kind of custom made ecommerce source not woocommerce or a plugin but I'm not happy with my current setup. I heard a lot of people say wordpress is easy to use but have heard good things about magento but heard lots of people saying unless you got thousands of skills you really don't need magento. Generally you also need to take into account how you currently manage your inventory (which POS you use), because the two systems need to keep inventory in sync.
From a broad strokes perspective Magento is probably your best bet. Shopify or BigCommerce are what I would be looking at next. I don't recommend WooCommerce as it will have a difficult time with that many SKUs.

According to me Woocommerce is the best. I am not saying Prestashop is not good but they have their limitations and in the recent time after the evolution of eCommerce Woocommerce grow fast. One of the main reason I will never recommended Prestashop is they are not fully SEO focused.
You can go and just take a look at their URL system which I never understand why they have. Eg. www.example.com/123-example. In Woocommerce you will have SEO friendly URL structure because of Wordpress CMS system.
And I never saw any PrestaShop site in the top 10 of the google search results for any competitive keywords. Woocommerce offers all the 360 view strategy which you need for your business to start from scratch. So I will always recommended Woocommerce over PrestaShop.

There's no real right or wrong answer here. It's USUALLY preference.
I would learn the true pros and cons of the platforms and find the best fit for your client. For example, Woocommerce being open-source can give you more flexibility with custom features that may generally rely on an app within Shopify. If that app doesn't exist (which is growingly rare these days) then Woo might be a better fit. Cost can also be an important factor. Hosting is pretty affordable these days for Woo sites with decent traffic relative to your revenue.
I enjoy both platforms and my team has had extensive experience in both.
If you don't mind about the pricing, go for Shopify. It has everything you need, including essential features, a friendly and intuitive user interface, as well as many apps to do more tasks.
I haven't heard of PretaShop so I'm not really able to give you much feedback there. However, I have worked on Shopify, WooCommerce, BigCommerce and even Magento websites before.
I'm a huge WordPress advocate so WooCommerce is probably my top recommendation. I really like Shopify as well. But what I often find aggravating is that almost any meaningful functionality you'd like to add to it is a plugin that costs an additional monthly fee. It's kind of obnoxious. WooCommerce being WordPress affiliated gives you access to so many other great site functionalities that are often free.
